Baked Avocado Eggs

Most people don’t recommend baking or grilling avocados, for two reasons: they are extremely nutrient-rich when raw and their taste becomes slightly bitter. Nonetheless, avocado oil is heat-stable and has a high smoking point. If yours are getting a little soft, this is one way to enjoy them, baked and stuffed with eggs and vegetables. It’s a simple brunch option if you have guests over.

Eggs are one of my favourite protein options. I couldn’t give them up even though I know that having a vegan diet is more ethical in some ways, they’re just so versatile and satisfying. I have to stick to buying free-range organic (guilt-free) ones instead. As a acidic food, they are best consumed with alkaline foods, like green vegetables, so they do go pretty well with the ingredients in this recipe. I really like this recipe I found recently, Avocado Omelette, something I’ll try out soon.

For now, this is as wild as I get when it comes to cooking eggs, using them as a stuffing for vegetables like bell peppers or avocados. I do make Vegetable-Stuffed Egg Pancake, but mostly I prefer them very simply poach-scrambled (it tastes one minute to cook them in a mixture the heat-stable ‘non-spitting’ extra-virgin coconut oil, garlic, chives and water). The result  tastes like scrambled eggs cooked with milk.

Eggs whites, when eaten raw, contain strong enzyme inhibitors making them more easily digestible. Egg yolks, when eaten raw, contain lecithin, which helps in dispersing and breaking down fats so that they do not accumulate in the liver. the more I read, it seems that eggs are truly healthy raw (but not appetising for me at least), but not so much when cooked. They are a source of protein, and very satiating, but are also acid-forming, and so eating too many is problematic for the gut. Pairing eggs with the alkaline leafy greens and other vegetables is the best way to enjoy them when cooked.

Avocados, possibly the best fruit in the world, and this is possibly the worst way to eat them. But, perhaps the best way to eat those are getting old. Read more about avocados in Quinoa & Yellow Millet Avocado Salad.

Though I tend to recommend raw foods for their superior nutritional properties, I have to say that tomatoes are perhaps just as healthy if not healthier cooked. This is because they are said to support prostrate health in men.

Ingredients
Ripe avocados, 2
Free-range eggs, 4
Cherry tomatoes, finely diced, 4
Bell pepper, finely diced, 1/4
Spring onion, finely chopped, a handful
Fresh coriander, finely chopped, a handful
Sweet or smoked paprika, to taste
Sea salt, to taste
Black pepper, to taste

Preparation Time
15 minutes

Preparation
1. Pre-heat the oven at 160 degrees celsius.
2. Slice the avocados into halves, remove the stone & place on a baking tray.
2. Crack an egg into each of the avocado halves.
3. Sprinkle with the finely chopped cherry tomatoes, bell pepper & spring onion.
4. Bake for about 10 minutes.
5. Sprinkle with paprika and any other seasoning of your choice.

Optional 
Add finely diced celery or carrot too and a sprinkle of red chilli flakes, habañero or cayenne pepper for added kick.
